Simple Parmesan Crusted Pork Chops (Perfect for Weeknight Dinners)

- Mix your coating: In one bowl, whisk your eggs. In another, combine your seasoned Panko bread crumbs and Parmesan cheese.
- Dip and coat: One at a time, dip each pork chop into the egg mixture, then into the bread crumb mixture, pressing gently so the coating sticks.
- Heat your oil: Pour about 2 cups of olive oil into a large skillet and heat it on medium. You want the oil hot enough to sizzle when the pork hits the pan, but not so hot that it burns the coating.
- Fry to perfection: Add a few pork chops at a time and cook for about 7 minutes per side, or until golden brown and cooked through.
- Keep them warm: While you finish the rest, preheat your oven to 200°F, place a cooling rack over a baking sheet, and pop the cooked chops in the oven to stay warm and crispy.
