What You’ll Need

  • 10 thin-cut pork chops
  • 4 eggs (for dipping)
  • About 3 cups of seasoned Panko bread crumbs
  • 1 cup of shredded or ground Parmesan cheese
  • Olive oil (around 2 cups, for frying)

A sprinkle (or two!) of:

  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Paprika

(I don’t measure these — I just sprinkle each one over the pork chops and coat both sides well. Follow your heart here!)

How to Make Them

  1. Season the pork chops: Lay your pork chops out and generously sprinkle each side with salt, pepper, garlic powder, onion powder, and paprika.
  2. Mix your coating: In one bowl, whisk your eggs. In another, combine your seasoned Panko bread crumbs and Parmesan cheese.
  3. Dip and coat: One at a time, dip each pork chop into the egg mixture, then into the bread crumb mixture, pressing gently so the coating sticks.
  4. Heat your oil: Pour about 2 cups of olive oil into a large skillet and heat it on medium. You want the oil hot enough to sizzle when the pork hits the pan, but not so hot that it burns the coating.
  5. Fry to perfection: Add a few pork chops at a time and cook for about 7 minutes per side, or until golden brown and cooked through.
  6. Keep them warm: While you finish the rest, preheat your oven to 200°F, place a cooling rack over a baking sheet, and pop the cooked chops in the oven to stay warm and crispy.
