If there’s one recipe I keep coming back to—especially when I want to impress without the stress—it’s this no-knead artisan bread. It’s crunchy on the outside, soft and fluffy on the inside, and (best of all) takes almost no hands-on time.

I’ve made it for family dinners, gifted it for holidays, and served it as an appetizer with fancy butters… and every single time, someone asks for the recipe.

The secret? You don’t need to knead it. Like, at all. Just stir, cover, forget about it, and bake. That’s it.

Whether you’re pairing it with a cozy stew, spaghetti and meatballs, or slathering it with jam and calling it breakfast, this bread shows up every time. Bonus: It makes your kitchen smell like a bakery. You’re welcome.

What You’ll Need

3 cups all-purpose flour

½ tsp dry yeast

1 ½ tsp salt

1 ½ cups water

How to Make It (While Doing a Million Other Things)

  1. Mix It Up: In a large bowl, stir the flour, yeast, and salt together. Slowly pour in the water while stirring, until a shaggy ball of dough forms.
  2. Forget About It: Cover the bowl with plastic wrap and a clean towel. Let it sit on the counter for 12–18 hours. Yes, overnight! It’ll rise and bubble on its own while you sleep.
  3. Preheat Your Oven: About 30 minutes before baking, preheat your oven to 450°F with your Dutch oven inside. This gives the pot time to get nice and hot.
  4. Shape & Bake: Carefully turn the dough out onto oiled parchment paper and shape it into a loose ball (no perfection necessary). Use the parchment to lift it into the hot Dutch oven.
  5. Bake: with the lid on for 30 minutes. Then remove the lid and bake for another 10–15 minutes, or until it’s golden and crusty.
  6. Cool & Devour: Let it cool (just a bit!) before slicing. Then dive in.Ways We Love It

Ingredients

  • 1 1/2c Room Temp Water

Directions

  • Stir flour, yeast, and salt while adding water slowly until a ball forms.
  • Cover with plastic wrap and clean towel.

  • Preheat oven to 450 degrees (with dutch oven in it).
  • Remove dough from bowl onto oiled parchment paper. Shape into ball, then add into dutch oven.
  • Cook for 30 minutes. Remove Lid and cook for an additional 10-15 minutes.
  • Remove from oven, place on a cooling rack. Then Enjoy!
