Finding the perfect banana muffin recipe can be a struggle. Some times they can be too dry, other times they could be too mushy. And let me tell ya, when you have a toddler as your taste tester, they don’t spare your feelings.
This post contains the perfect banana muffin recipe that is sure to be a crowd pleaser.
Banana Muffin Recipe
Step One: Preheat your oven to 350 degrees. Line a cupcake pan with twelve liners. And prep the ingredients.
Step Two: Peel and mash bananas then set them aside. If you had thawed them, make sure you drain the juices.
Step Three: In your mixing bowl, combined melted butter and sugar until combined. Should take about a minute.
Step Four: Add in the egg, vanilla, baking soda and mashed bananas.
Step Five: Once all previous ingredients are combined, add in the flour and salt. Mix for a few minutes until everything is incorporated. Do not over mix the batter.
Step Six: Fill each cupcake liner two-thirds of the way. You can use an ice cream scoop and it’s the perfect amount.
Step Seven: Bake in oven for 20-25 minutes OR until golden brown. Stick a toothpick or cake tester and if it comes out clean, they are good to go!
Step Eight: Place on a cooling rack and enjoy!

Extra Baking Tips
- If you’d like to make mini banana muffins, follow the same steps above and bake for 10-12 minutes, or until golden brown and a tooth pick comes out clean.
- If you’d like to make banana bread, grease a loaf pan (I also line with parchment paper but not necessary) and bake for 55-60 minutes, or until golden brown and a tooth pick comes out clean.
- I love adding extras into any muffin recipe. 1-2 Teaspoons of Cinnamon, 1/2 Cup of Blueberries, 1/2 Cup of Chocolate Chips or 1/2 Cup of Walnuts some of the few extras I’ve added into this recipes (not all at once).
